Tales & Recipes from the Motherland captures the spices and flavours of 28 dishes from members of Bedford’s African and Caribbean community.
Editorial director Dr Mrs Pamela Bernard said many of the Recipes had been passed down through the generations and reminded families of life in Africa and the Caribbean.
Each recipe contains pictures and step-by-step guide, and you can have a go at preparing Curry goat from Jamaica, Nigerian Porridge, Coconut Fish Stew from Kenya or Barbados Cou-Cou and Flying Fish.
Ingredients are sold in African and Caribbean and some Asian food shops, and many in supermarkets. Fifty per cent of first year sales profit goes to the African and Caribbean Forum in Bedford to back projects to improve the lives of disadvantaged and emotionally disturbed young people”
